1 1/2 cups regular rolled oats
1 cup coconut flakes
1/2 tsp (càc) salt
1 tsp (càc) cinnamon
1/2 tsp (càc) allspice (quatre épices)
1/4 cup of almond meal
1/2 cup hazelnuts chopped
1 cup dried fruit *
3 ripe bananas, mashed
1/4 cup canola oil
1 teaspoon vanilla extract
Preheat oven to 350F (175C). On a baking stone (or line your baking sheet with parchment paper)…
Mix oats, almond meal, nuts and coconut flakes.
Add spices.
Add dried fruit and stir until evenly blended.
In another bowl, combine canola oil, mashed banana and vanilla extract. Pour wet ingredients over dry ingredients and stir until well combined.
Take a large cookie cutter and press spoonfuls of the batter into it. Remove cookie cutter. Bake for about 20 minutes or until edges are golden brown.
They’re great warm. I froze my cookies after they were baked and then popped two of them in the toaster each morning for breakfast. Excellent with earl grey tea and homemade yogurt.
*It called for half dried dates and half raisins, but I can’t find dates so I used white raisins. Anyone want to send me some dried dates, the kind you sprinkle over cereal, that would be SOOO good!
