Forge Lasting Family Memories — Grammie’s Chocolate Meringue Pie

Grammie nurtured traditions. She kept traditions alive by filling her house with the same familiar aromas holiday after holiday, year after year.
Today we grandkids tried our hand at keeping the tradition alive by baking her signature pies for her memorial service.
We realize that the legacy she leaves behind resides in us. And I’m probably not going to make the pies exactly the way she did, but I will definitely nurture to traditions in my family and repeat things that forge lasting family memories.

Grammie Pie Crust, or your favorite pie crust

3 egg whites
1/2 C sugar

6 T Rawleigh chocolate pudding mix
2/3 c sugar
1 egg yolk beaten
2 c milk

Make meringue first then prepare the filling.

1 pie = 3 egg whites whipped Med High in metal bowl until soft peaks formed
Add 1/2 C sugar and continue mixing until sugar is dissolved and stiff peaks form.

Chocolate filling

Combine mix, sugar, yolk, and ½ c milk. Stir until smooth. Add more milk, stirring. Cook on medium heat stirring until thick.

Assembly

Scoop meringue on the piping hot filling. To avoid meringue shrinking spread to overlap with crust evenly around. Dab with the rubber scraper to draw peaks up to decorate.
Bake at 325°F for 20-30 min.
Cool on window sill or countertop before serving. Makes 1 pie.
