2⁄3 cup (160 g) sugar (less)
6 tablespoons (62 g) minute tapioca
5 1⁄2 cups (1300 ml) milk
2 eggs

2 teaspoons (10 ml) vanilla extract
Mix sugar, tapioca, milk and egg in a saucepan, let set 5 minutes.
Cook on medium heat, stirring constantly, until mixture comes to a full boil.
Remove from heat, then stir in vanilla.
Cool 20 minutes, then stir. Thickens as it cools.
Serve warm or cold.
